Breakfast Frittata


This is the most amazing healthy way to start your day. Our breakfast frittata is healthy, delicious and nutritious and completely customizable. There is so much flavor in this one dish your family and friends will be talking about it for weeks. We have developed this recipe so that you can make it healthy and customizable. This is the best way to use your leftovers and save money.


Ingredients

Leftover turkey/chicken/fish- 1# pulled apart

Yellow onion- 1 each sliced

Whole eggs- 8-12 (depending on how many people)

Bell pepper- 1 each

Chili powder- 2 tbsp minced

Potato- 1 pound peeled small diced

Spinach- 2 cups

Cheddar cheese- 1 cup

Parmesan cheese- ½ cup

1PL8 Herb Salt- to taste

Fresh black pepper- to taste

Olive oil- 1 tbsp


Method:

1. Preheat oven to 450 degrees, if using convection turn down to 425 degrees.

2. Begin heating your sauté pan.

3. When your pan is hot, add the olive oil and then add the onions.

4. Season with a little herb salt and let cook, about 5 minutes or until golden brown.

5. Add the potatoes and mix well let cook for 4-5 minutes stirring occasionally.

6. Add the leftover meat or fish and season with the chili powder.

7. Mix well and add the eggs, spinach and cheddar cheese.

8. Sprinkle the top with parmesan cheese and place in preheated oven for 20 minutes or until fully cooked and brown on top.

9. Enjoy the delicious breakfast and just don’t use it for Christmas, make it your own and cook regularly.
