Creamy Roast Garlic Potatoes


Roasted Garlic Mash Potatoes

Ingredients

Fresh garlic 1 bulb

Russet or Idaho potatoes 2.5# peeled diced

Butter 2 ounces

Milk or Cream 1.5 cups

Herb Salt to taste

White pepper to taste

Method:

1. Preheat your oven to 350 degrees.

2. Cut off small portion of top of the garlic bulb and wrap entire bulb in aluminum foil. Place in 350-degree oven for 45 minutes or until when you squeeze it, its soft and tender.

3. Using a fork poke holes into the potatoes. In the same oven add your clean washed potatoes, skin on is best.

4. Cook in oven for 45 minutes to 1 hour or until when squeezed are very tender.

5. When tender remove from oven and let cool some.

6. Using a food mill or by hand remove skin.

7. Mash with a fork, food mill or masher until everything is broken down.

8. Add hot milk small portions at a time and mix well.

9. Add butter and mix well and then the remainder of milk or cream until smooth.

Season to taste with herb salt and white pepper and serve hot.
