Simple Delicious Hearty Soup

Puree of Broccoli Soup


Olive oil 1 tbsp

Onions 2 cups diced medium

Garlic 2 tbsp minced

Broccoli 2.5 # (fresh or frozen)

Chicken stock or water 2 quarts

Herb salt to taste

Fresh ground black pepper to taste

Half & Half 1 cup OPTIONAL


1. Heat your pot on medium heat and when hot add your olive oil.

2. Add your onions and start to sweat until translucent or cook them longer until they begin to turn light to a medium brown. (The browner color the onions the greater the flavor and sweetness of the soup)

3. Add the garlic, stir in, and cook just until aroma. Once you can smell the garlic it’s time to move on to the next step.

4. Add the broccoli and stir well to incorporate with onions and garlic.

5. Add the stock or water. Only enough to go ½ way up.

6. Bring to a boil and then turn down to a simmer.

7. Simmer until the broccoli is fork tender.

8. Remove from heat and use a blender or immersion blender puree until very smooth.

9. If to thick add more stock, water, or half & half.

10. Stir well taste and season with herb salt and pepper.

11. Can garnish with freshly shredded cheddar cheese if you choose.
